“Misti kumra” is the Bengali name of sweet pumpkin. Ripe sweet pumpkin is good for pan fried or grill.
500 g. sweet pumpkin
50 g. roasted peanut
02 pcs green chili
05 g. ginger paste
05 g. garlic paste
05 g. dry red chili powder
10 g. cumin powder
Pinch of cumin seeds
05 g. turmeric powder
05 g. salt
Oil for cooking
Slice the sweet pumpkin about 3/1 inch thick, 02 inch long and width 01 inch then keep a side.
In a mixing bowl assemble the ginger paste, garlic paste, dry red chili powder, cumin powder, turmeric powder, salt, 02 tbsp. oil and green chili and make it paste.
Bring the sweet pumpkin on mixture bowl and marinate with mixed paste then keep it 15 minutes for rest.
Make a frying pan medium high heat then put a pinch of cumin seed and let tempered it, add oil and wait for oil become hot.
After oil become hot then put sweet pumpkin on the pan. Shallow fry the sweet pumpkin one by one side until cooked. When Sweet pumpkin becomes cooked, add the crushed peanut . After finished, sweet pumpkin keep in a serving dish.
Serve the “pan fried sweet pumpkin with peanut” with any type of rice dish or roti .
