Misti Doi or Sweet Yogurt is a popular Bengali dessert. Mainly it’s made by fermented full cream milk, for making sweet need to use sugar or molasses and need to add some yogurt for easy to fermentation.

Method

In a deep pan put the liquid milk and mixed with powder milk. Boil the milk on low medium heat and stir often. Continuing boil until reduce up to 30% of milk.

For making caramel put the sugar in a pan and 01 table spoon of water then bring on medium heat. Heat the sugar until turn to becoming light brown colour. Don’t make too much colour other aways  can be burn.

Transfer the caramel in milk pan and stir well for few minutes or stir until melt the caramel well with milk. 

After mixed well the milk and caramel move the pan from burner. wait some times for reaching little warm temperature then add the yogurt and mixed well by using whisk.

In a clay pot put the yogurt mixture milk and cover with a lid, if possible use also a cloth to cover fully the pot. [ any pot or bowl is ok but clay pot is best] in a dark and warm place keep the pot for about 08 hours to fermentation it. 

After you get the perfect misti doi you can enjoy immediately or can be keep in refrigerator.
