Yam(Mati Alu) with Coconut Milk

Mati/mete Alu is the Bengali name of Yam and usually we eat as a vegetable. Yam curry we like its taste, flavor and creamy texture.
Ingredients:
500 g. yam ( mati alu)
200 ml. coconut milk
50 g. onion shredded
01 tbsp. garlic chopped
01 tbsp. turmeric powder
01 tsp cumin powder/ PASTE
pinch of cumin seed
02 pcs bay leaf
02 pcs dry red chili
01 tsp chili paste/powder
01 tsp coriander powder
02-03 pcs green chili
Salt as per taste
Oil for cooking
1/2 tsp red chili powder
Method:
## Peel the yam and cut by large dice size.
## Make a pan medium high heat then put 01 tbsp. cooking oil and shallow fry the yam with salt, turmeric powder, cumin powder, coriander powder, green chili and chili powder for about 03-05 minutes. Add 01 cup hot water on the pan and cover with a lid, cook on medium heat for about 10-12 minutes or until yam become soft. After yam become soft remove the lid and put coconut milk on the pan.
##On the other side make a pan medium high heat then roast the dry red chili, bay leaf and cumin seed put oil after 01 minuet. When oil will be heat then add onion shredded and chopped garlic, stir well. After onion and garlic become brown transfer to the yam curry and mixed well.
## Cover with lid and cook more 05 minutes on simmering point. After finish cooking enjoy with steam rice, yellow fried rice or roti
