From the ancient period Bangladeshi people use to having fried rice. Kids to older everyone likes fried rice. Fried rice usually made from leftover boiled rice. Yellow fried rice known as a Bangladeshi style fried rice. If I translate “Yellow fried rice” to Bengali word, it will be” Bhaja Holud Bhat”. After finished dinner if have some extra rice our mother/ grandmother never throw it, they are always try to save for next day. In the morning time leftover rice are used for making yellow fried rice.
Turmeric is so much popular spice and herbs in South East Asia. It is not only a spice it also a medicinal herb. Bengali people like turmeric for their majority percent of the curry dish. In this dish, turmeric powder use for make the yellow color, better taste and flavor. So turmeric powder is one of the main ingredients of this dish.
I learned this recipe from my mother.
Ingredients
- Left over /cold Rice ——-01 cup
- Medium size Onion ——01pcs
- Garlic —————-02cloves
- Dry Chili ———-02 pcs
- Bay Leaf ——–01 pcs
- Green Chili ——–01 pcs (Optional)
- Cumin Seeds ———-1/2 tsp
- Black Cumin ———1/3 tsp
- Mustard Oil————01 tbsp
- Turmeric Powder ——-01 tsp
- Salt ———- as the taste
- Coriander leaf——– 01 tsp
Method of Cooking
** Shredded the Onion thinly and need to chopped garlic.
** Make a pan medium high heat and put Dry Red Chili, Bay Leaf, Cumin Seeds, Black Cumin Seeds then Mustard Oil.
** When Oil will be hot then put Onion and Garlic, stir well. After Onion become nut brown add Turmeric Powder. If you like spicier you can put some chopped Green chili.
** When all the ingredients will be mixed well then add the Rice and stir frequently.
Put salt as per your taste
After Rice become soft sprinkle chopped coriander leaf and serve.
