Banana blossom is called “Kolar Mocha” in Bangladesh. Bangladeshi people usually like to eat banana flowers curry with warm rice . In this recipe banana blossom cooked with coconut and coconut milk .
Ingredients :
01 pcs banana blossom
20g. coconut flakes
100 ml. coconut milk
02 tbsp. chopped onion
01 tsp garlic paste
01 tsp ginger paste
01 tbsp. rice flour
01 tsp turmeric powder
01 tsp cumin powder
01 pcs bay leaf
02 pcs dry red chili
02 pcs green chili
01 inch cinnamon stick
02 cardamom
04 cloves
1/2 tsp cumin seed
Salt as per test
1/2 tsp red chili powder
02 tbsp cooking oil
Water for cooking
Method
- Remove the brown skin part from banana blossom and take out all of the flower. Every flower have some big stick and a oval shaved harder part (like plastic), so need to remove it.
- Boil the banana flower with salt and a pinch of turmeric powder until become soft. Chopped the boiled banana flower and keep in a bowl.
- In a medium heated pan add the dry red chili, cumin seed, cinnamon stick, cardamom, cloves, bay leaf, stir few moment without oil (it’s a technique to get more flavor) . Put the cooking oil on the pan then add chopped onion and stir well until onion become brown color . Add ginger paste, garlic paste, turmeric powder, cumin powder, salt, red chili powder and mixed well.
- After oil will be separate from gravy add the chopped banana flower and coconut flakes. Add 50 ml of hot water to the pan, then cover it for about 05 minutes. Dulled the rice flour with room temperature water and add to the curry. When banana flower will be fully cooked then add just with salt and add coconut milk. Keep the curry on simmering point for about 02-03 minuet then serve it with steam rice or roti.
